Because when you get hot water out of the tap, the water has a higher level of lead due to the heat passing through the lines.
Nowadays it is not such a danger as it was back in the days of lead pipes and paint. That is not to say there is not lead traces in the lines going to your house.

I remember in Jr. High School ["middle school", today], our science teacher put equal amounts of cold water & hot water – each in a separate same size pot.
He fired up all the way the Bunsen burners. He asked each of us, "Which one will boil first?"
Every person either said, "Hot" or "Cold".
NO ONE said "The same time.".
The water took the same amount of time to boil the cold water as it did for the hot water.

but I think it has to do with if you RUN the hot water from cold to hot then you just wasted 2 gallons of water..

And most of that "everything" is stuff you don’t want to know about, stuff deposited inside the water pipes. Fecal matter and E.coli bacteria is just some of its ingredients. The older the house the dirtier are the pipes.
If you are curious, you can get your tap water analyzed in some lab or with some home kit. You will see how much dirtier hot water is. Those extra minutes spent on boiling cold water will save your body from a lot of bad s*** (stuff

My great Aunt had a tea time ritual. She always ran the water to clear the pipes and filled the tea water kettle with cold water. then heated this water. She said it made better tea!
I don’t bother. I just fill the kettle or pot with whatever temp the water happens to be at the moment.
I just purely hate for someone to insist on running cold water in the dishpans for tea while I am washing dishes!!! References :

because the hot water melts the lead in the pipes which you end up drinking, but it’s not too dangerous, you would just want to avoid it.

I think it is because there is more copper in hot water pipes so you should use the cold water for cooking.

Never heard of it being a bad thing. Only when it comes to making a stock, you always should use cold water.
