Ingredients for Beef Shabu-Shabu & Zosui
(serves 2)
300g Slice Beef (10 1/2 oz)
Shungiku – Edible Chrysanthemum
Mizuna – Pot Herb Mustard
Welsh Onion
2 Shiitake Mushrooms
80g Enoki Mushrooms (2 4/5 oz)
40g Kudzu-kiri – Dried Kudzu Starch Noodles (1 2/5 oz)
1 Lime
3 tbsp Soy Sauce (an equal quantity of lime juice)
100g Daikon Radish (3 1/2 oz)
2 Long Green Onions (also used for zosui)
3 tbsp White Sesame Paste
1 tbsp Soy Sauce
2/3 tbsp Fish Sauce – Nam Pla
1 tbsp Vinegar
1 tbsp Sugar
2 tbsp Water
1/2 clove of Garlic
1200ml Water (5 u.s. cup)
2 pieces of 10×10cm Kombu Kelp
50ml Sake (1 3/4 oz)
A Little Bit of Salt
200g Hot Steamed Rice (7 oz)
1 Egg
A Little Bit of Salt
A Little Bit of Soy Sauce

I have lived in …
I have lived in Japan for years. I’ve eaten everything from fish to chicken, beef, pork and even horse raw. I’ve never gotten sick from it at all. Animals live in much better conditions so you don’t have to worry. Meats from Japan are usually 2 or 3 times as expensive as from the US or Europe.

Trichinosis is …
Trichinosis is actually a parasite. The way pigs are raised here in the US, it is impossible for them to contract trichinosis now-a-days. Sad to say but that is because their living conditions are confined to grates. Usually they contract trichinosis by consuming feces that have the eggs in it. So pork from free-range pigs would still be at risk. But the stuff you get in a grocery store would be safe to consume raw. Doesn’t mean I would as I am a worry wort

I love watching your videos. I lived in Japan for 2 years from 2004 – 2006 and I really miss it sometimes. I miss the food especially since it is so hard to find authentic Japanese cuisine outside of Japan. Keep doing what you are doing. Thanks a million!!

you are completely right about which raw meat to consume.
and yes pigs in Japan are raised differently then over here in America and some parts of Europe.
they are not pumped with chemicals, and they are usually free to roam on the farm, they have a feed trough, but they do have the choice to eat whatever they find on the farm grounds.
because they aren’t given hormones or other chemicals, they rarely become sick, which leads to better pork meat!
